Fall in his face: Vegetable salad «Russian»

This salad is not very different from American potato and has similarities with such traditional Russian new year’s salad as «Olivier». By the way, there are several types of «Olivier», which is written on every cooking site, so we’re not going to compete with them and reinvent the wheel. You can easily slip this salad as your personal recipe «Olivier».

It is faster and easier.

Ingredients for 6 servings:

2 large potatoes;

2 large carrots;

200 grams of canned green peas;

200 g canned white beans;

1 Apple «Granny Smith»;

4 tablespoons of olive oil;

6 tbsp water;

1 tbsp Apple cider vinegar (or ordinary);

1 tsp fine-grained sea salt;

¼ Tsp of black pepper;

1 small bunch fresh dill, finely chopped.



In a saucepan to get water and bring it to a boil.

Clean the carrots and potatoes and cut them slices with a size of about 1 cm.

Cooked carrots in a pot with boiling water, cook for 5 minutes. To fish it out with a slotted spoon, drain and allow to cool.

Now cook the potatoes, it will take about 7 minutes (depending on potato quality). To catch potatoes with a slotted spoon, drain and allow to cool.

At the same time, Apple wash and cut into cubes (with the skin). Set aside.

For the sauce in a blender chop and blend: beans, olive oil, vinegar, water and salt. If it’s too thick — add more water.

In a large bowl, mix the vegetables and Apple. Add the sauce and mix well. Taste and add salt if necessary.

Sprinkle with dill and chill before serving.
